Yacon is an Andean natural healthy dietetic food. It is grown in the Andes (Peru & Ecuador, South America) for its crisp, sweet-tasting tuberous root. The texture and flavor have been described as a cross between a fresh apple and watermelon. The root of yacon is considered the world's richest natural source of fructo-oligosaccharides(FOS). Most roots and tubers store carbohydrates as starch, whereas yacon stores carbohydrate as FOS composed mainly of fructose and inulin. Benefits noted with FOS supplementation include increased absorption of calcium and magnesium, and improved elimination of toxic compounds.

While satisfyingly sweet and flavorful, Yacon remains low in calories.
